Egg powder production may appear straightforward, but the reality behind the process is far more complex. At Adriaan Goede B.V., approximately two million eggs are processed every day. The company produces various egg powders used in bakery products, sauces and other food applications.

Inside the production facility, three spray dryers (box dryers ) convert liquid egg products into stable powders. Maintaining consistent powder quality requires precise control over the spray drying process.

The challenge of drying egg products

Eggs are a natural raw material, which means product properties can vary depending on feed, environmental conditions and other factors. At the same time, customers expect highly consistent powders with stable functionality. 

According to director Gerwin: “Customers today expect the powder to behave exactly the same every time.” This makes process stability essential.

Small deviations, big impact

In spray drying, droplet formation plays a critical role in determining the behavior of the final powder. Even small deviations in the spray pattern can influence drying efficiency and product quality.

If droplets become too large, they retain more heat during drying. This can increase the risk of clumping later in storage or processing. The objective is therefore clear: dry the powder as efficiently as possible while maintaining stable product behavior.

 

Increasing demands from the market

While spray drying technology itself has not fundamentally changed in recent years, customer expectations have increased significantly.

 Producers must now meet stricter requirements for:

  • microbiological quality
  • powder consistency
  • colour and functional behaviour

This means tighter process control and deeper technical understanding.
